Just like any other type of breakfast, a vegan breakfast can be as simple or as extensive as you want, from a quick energy boost to an extensive brunch. Most vegans that we know eat things like eat things like oatmeal, smoothies or crackers in the morning. Very good of course – and very healthy. Yet it is sometimes nice to eat something different.
